Lime Cilantro Slaw

INGREDIENTS

  • 1/2 cup purple cabbage, thinly sliced

  • 1/2 cup green cabbage, thinly sliced

  • 1 carrot, julienned

  • 1/4 cup cilantro, chopped

  • Juice from 1-2 limes

  • 1 tbsp olive oil

  • 1 tsp honey/maple syrup/agave


DIRECTIONS

SERVINGS: 3-4 PREP/COOK TIME: 10 MINUTES

  1. Prep all ingredients

  2. Mix everything together and place in a sealed container in the fridge for 30 minutes at least

  3. Serve with tacos, burritos, salads, etc

For those of you that have been following me on social media for a while, you know how much I love Mexican food. I grew up eating it weekly and honestly, I could eat it every day and not get sick of it, and sometimes I do haha! One thing I will say is, I do not know what I was doing before adding this dish to my tacos! It brings the perfect crunch, tanginess, and lightness to the dish that is seriously SO good! It is the simple ingredient your tacos have been missing.

One of the nice things about this slaw is it can be made early and can sit in the fridge for several hours before using and still be delicious, heck it’s even more delicious than when you make it fresh. Either way, though you put the mixture of the cabbage and carrot, cilantro with the lime juice and honey and it’s just an amazing flavor combination. Now if you want to spice this dish up some you can add some fresh jalapeno too! My mouth is watering just thinking of it.

Some of my favorite dishes to use this on are tacos, of course, tostadas, salads, tortas, nachos, bean dip, guacamole, etc… Let us know what you’re making!
